(And the sweet style is tricky to homebrew, too, because what the yeast likes to do is to eat the honey-water down to a dry wasteland, so sweet mead usually involves killing the yeast and sorbating…

Keep in mind it is sweet, so if you don't like sweet drinks, it won't be for you. Moniack mead is the stuff I've been raving about. Hope I haven't over sold it.

Ah. I think I am under-experienced in good mead. I'll have to investigate UK mead when I am next in Canada (and will bring a bottle back should I remember).

The problem is I don't want just mead. I want GOOOOD mead, and I'm pretty sure I can't do that when commercial products in the US just don't compare to this stuff from the UK.
